The main filter caps could be upgraded but two 10,000uF units will generate a pretty impressive inrush and stress the bridge rectifier every time the amplifier is powered up. Although it is rare, bridge rectifiers can short out, and then the transformer gets toasted.

If the existing caps were failing (swelling up, leaking...or the amp has more background hum than it used to have) then sure, replace them with whatever is available. Otherwise, I would file that one in the "not broke, don't fix" bin.
