You can try (go by steps so that you know where the stability line is crossed, don't try to push the maximum on the first shot), but most of the PIII-1GHz parts were Coppermine cores, not Tualatins, and would tolerate little or no overclocking. If somehow it IS a Tualatin, then you may be able to push the clock toward 1.5GHz.
However you will probably be limited by your memory; if it is rated PC100 and is presently operating at 133MHz bus, then you are probably running against its limits already.
The only serious risk I can think of is to the files on your disk. Once you overclock, you run the risk of booting up a marginally-stable system that doesn't lock up instantly -- but does begin spontaneously locking up, rebooting, crashing out applications, or corrupting active user data.
If this is an important machine whose misbehavior would cause serious problems for you, stay away from the overclocking options and instead upgrade it to 512MB of PC133 SDRAM and a GeForce4 Ti-4200. That will be about the best performance level that machine can yield anyway...
