Bank interleaving refers to the internal banks within a memory chip. There are 4 internal banks / chip and the data are written sequentially to these banks if interleaving is enabled. For some memory benchmarks it shows a big performance increase (Sandra), in real life applications the performance increase depends on the software, some games bump up like 2-3%, some don't. Any application running off the cache (business) will see a performance hit because in case of a page miss, not only 1 bank has to be closed but 4 before the next bank activate (Row address can be issued)
